I had the chance to illustrate this cookbook project made by the incredible chef Stephane Modat and the amazing photographer Frédéric Laroche. It has been a good exercise to draw this solid variety of fishes we can find in the waters of Quebec. The recipes just pay respect to the fish itself and gives you a certain challenge to execute.
